Basil Pesto Chicken Salad Dip

This recipe is a perfect way to use up leftover chicken breast from the night before. Could be served as an appetizer or snack but I love to have it for lunch.

Basil Pesto Chicken Salad Dip
Ingredients

Total Time: 10min

Yield: 2 cups of dip

2 cups diced cooked chicken breast

1/2 cup chopped red onion

1/3 cup grated parmesan cheese

1/2 cup mayo

2 tbsp basil pesto

pinch of black pepper

Instructions
  • Put all ingredients in food processor. Blend until well combined.

  • Place in serving dish and grate some more parmesan on top if desired.

  • Enjoy!
