Maple Pancake Breakfast Casserole

This tasty dish has all your favourite breakfast foods in one pan. It starts out with a layer of frozen hash brown patties that are covered with pancake batter mixed with maple syrup. Beaten eggs are poured on top and then the casserole is sprinkled with chopped ham and real bacon bits before baking. Served with more maple syrup this is the perfect weekend breakfast dish.
Maple Pancake Breakfast Casserole

Yield: Serves 4
4 frozen hash brown patties
1 cup complete pancake mix (the just add water kind)
1/2 cup water
1/2 cup maple syrup
6 large eggs
1/4 cup 10% cream
1/4 tsp salt
1/4 tsp pepper
6 slices of honey ham deli meat
1/4 cup real bacon bits

Preheat oven to 425F.

Place hash brown patties in bottom of greased 8-inch square pan. You will have to break apart the fourth one to make it fit.

In a small mixing bowl combine pancake mix, water and syrup. Whisk until no lumps remain.

Pour pancake mixture over hash browns.

In a small bowl beat eggs and cream together with a fork. Stir in salt and pepper.

Pour egg mixture over the pancake mixture.

Cop the slices of ham into bit size pieces and then sprinkle the ham and bacon on top of the casserole.

Bake for 40-45 minutes until cooked through and top of casserole starts to brown.

Remove from oven, slice and serve with maple syrup.
