Mexican Beef Crunch Wrap

Last night for dinner I made Mexican beef wraps inspired by burritos but with some changes. These wraps are filled with ground beef, rice, corn, cheese and Fritos to give them a crunch. I baked them in the oven to get the tortilla crispy and the cheese all melted. Served up with a side of salsa mixed with ranch dressing these wraps are perfect for a Mexican inspired dinner.
Mexican Beef Crunch Wrap
Prep Time: 15 min Cook Time: 5 min Total Time: 20 min
Yield: 4 large wraps
Ingredients
1 cup uncooked white rice
2 cups water
1 lb ground beef
1 packet taco seasoning
1 341ml can of corn
4 12" tortillas
2 cups Fritos corn chips
1 cup grated mozzarella cheese
1/2 cup salsa
1/2 cup ranch dressing
Instructions

Preheat oven to 425F

Pour rice and water into a medium saucepan and bring to a boil. Continue boiling until all water is gone and rice is cooked.

While rice is cooking fry ground beef in a large frying pan on med-high with a bit of oil or butter and the taco seasoning.

When the ground beef is fully cooked add in the cooked rice and the corn. Stir well.

Lay out the tortillas and spread Fritos along the middle of each one.

Top the Fritos with cheese and the ground beef mixture.

Fold in the short ends of the tortillas and then roll up the wraps.

Place the wraps on a baking sheet and bake for 5 minutes.

While the wraps are in the oven make the dipping sauce by combining the salsa and ranch dressing.

Cut each wrap in half and serve with side of dipping sauce.
