Sweet Potato Soup
with Chicken & Bacon

I made roasted chicken for dinner last night and today I was looking for a way to use up the leftovers. I threw together this super easy but totally delicious soup recipe with sweet potatoes, bacon, leeks and the leftover chicken. I served my soup with some Pillsbury country biscuits for a comforting winter meal.
This recipe would be great with leftover turkey too!
